Fabulous Friday

Got up and made homemade blueberry muffins this morning at 6 before Tony went to work. They turned out pretty yummy---except we both agreed they were a little on the sweet side. Here's the recipe:

1 cup milk
1 egg
1/3 cup vegetable oil
2 cups all-purpose flour
2 tsp baking powder
1 cup white sugar
1 cup blueberries
1/4 cup sour cream
1/4 cup brown sugar (sprinkle on top before baking--optional)

1. preheat oven to 400 and set up muffin cup liners.
2. In a large bowl, stir together milk, egg and oil. Add flour, baking powder, sugar and blueberries; gently mix the batter with only a few strokes. Spoon batter into cups.
3. Sprinkle with brown sugar.
4. Bake for 20 minutes. Serve hot!

I got the recipe from allrecipes.com . One of the comments said to use 1 cup of sugar instead of 1/2 (like the recipe said to use before I changed it). I would go with 1/2 cup next time, unless they were for snacks and not breakfast. Another comment said to add vanilla, but I am glad that I didn't. I liked the flavor, just not all the sugar.

Going to the grocery store to pick up more blueberries today. Maybe I will try again this weekend! Tony talked about going to the Houston Symphony or to see a play (The Mousetrap) at the Alley Theater. Looks like it's shaping up to be a great weekend!

For now, I'm off to take my cousin's daughter to see Eclipse. Don't tell---it's my second time to see it. ;)

Fun Date Night!

Had so much fun last night!! We stayed out laaaaaaate.... Hit the Astros vs. Pirates game last night with a couple of Tony's work friends, then went to the Flying Saucer for trivia www.beerknurd.com ! Tried a couple new kinds of beer (Real Ale Brewhouse Brown and Murphy's <--YUMMY! I got to WOW Tony with my useless knowledge. We knew 4/10 in round 1, 4/10 in round 2 ("Dragons" was the category), and 6/10(!!) in round 3 ("Types of things"). They asked about Harry Potter magical spells in round 3! Tony and I ended up with 150 points, and didn't win (3rd place had 180, can't remember 1st and 2nd but it was a tie). One team's name was the Bayside Tigers! So funny. We were the Terrible 2. We walked around downtown a little; it reminded me of how much fun we had in NYC. I need to put up some pictures of that trip!

Today needs to be a productive day. I've got homework to work on to finish up my Masters... a car to clean and laundry to do. It looks like rain, so I better get the car cleaning going!

Summertime...and the livin's easy!!

Having a lazy summer day today. Many, many (too many) old episodes of Gray's Anatomy watched. I'm so glad to have my dogs back home to keep me company! This is a picture that my brother Jason took of their vacation at Mom & Daddy's house in Henderson. From left to right, there's Baxter, Bella and Gracey.

Jason took Bella to get her hair cut---thank goodness! She looks like a tiny black deer now; she's all legs! As I type, she is laying right beside me on the couch all sprawled out. Baxter is on the floor in his little green bed---fat and happy!

I'm about to try a new recipe--slow cooker ribs. See, we've got ALL this cow in our garage freezer we need to get rid of... So, here goes. The recipe is on www.allrecipes.com . Love that site! We'll see how it goes!
